- Shrimp
- Roux: 6TB butter, 1/2 c flour
- 4 c chp onions
- 2 c chp green peppers
- 2 c chp celery
- 2 TB garlic
- 14oz can tomatoes
- 2 bay leaves
- (1/2 t cayenne)
- cajun seasoning
- green onions
- calls for 1 qt shrimp stock - start with less
Directions

Prepare roux – 10 min til looks like peanut butter.

Add veggies – 10 min

Add tomatoes

Season – cook 45 min

Add shrimp just til done, parsley

Serve over rice, topped with chp green onions
