- 2 bone-in, skin-on chicken breast halves
- Vegetable oil

Brine the chicken for 30-45 mins. Remove from brine, pat dry.

eheat oven to 450.

Pan fry the chicken in an oven-proof skillet to brown up and crisp the skin. Don’t rush this part, and you’ll probably want to do it at a higher heat than you think.

Once browned nicely, flip skin side up in the skillet and toss the skillet in the oven for around 20 mins. Done.
