Ingredients
- 2 Yukon Gold potatoes
- 1 tbsp vegetable oil
- 1 tbsp butter
- 1 clove garlic, minced
- 1/2 tbsp lemon zest
- 1/2 tbsp lemon juice
- 1/2 tbsp olive oil
- 1 tsp fresh oregano, minced
- Salt and fresh ground pepper to taste
Directions

Scrub, peel, and cut potatoes each into 8 wedges, lengthwise.

Heat butter and vegetable oil in a nonstick pan over medium high until the butter is melted and it’s finished foaming.

Put potato wedges in, cook on one cut side for 6-7 mins until golden. Flip and cook on other cut side until golden. Cover pan tightly, turn to med-low, and let cook for another 5-6 mins until soft all the way through.

Meanwhile, mix together garlic, lemon zest, lemon juice, olive oil, oregano, and salt and pepper. When potatoes are finished pour this mixture over them and toss to coat (carefully).
