Crunchy chopped salad

Ingredients
- 1/2 red onion, roughly sliced
- 5 radishes, sliced
- 2 carrots, roughly sliced
- 1/2 cucumber, sliced
- 2 tomatoes, thickly sliced
- 1 Cos lettuce, washed and separated
- 1 Little Gem lettuce, washed and separated
- 3 tbsp extra-virgin olive oil
- 1 tbsp herb vinegar
- 2 tbsp sunflower or pumpkin seeds, toasted
- 2 tbsp poppy seeds
- 1 apple, grated
Directions

Place the onion, radishes, carrots, cucumber, and tomatoes on a large chopping board and chop with a large knife until roughly the same size. Chop both the lettuces into the vegetables, scoop into a bowl and toss well.

Season with salt, pepper, olive oil and vinegar. Toss with the seeds and the grated apple to serve.
