No-Knead Oat Bread

Ingredients

  • 5-1/2 c flour
  • 1 c oats
  • 3 TB sugar
  • 2-3/4 t (scant) salt
  • 1 t yeast
  • 1/4 c honey
  • 1/4 oil
  • 2-1/4c + 2 TB ice water

Directions

  1. Mix liquids into dry ingredients – should be stiff.

  2. Brush top w/oil.

  3. Refrigerate 3-10hr

  4. Then rise on counter 12-18hr. Stir down once.

  5. Grease pans, sprinkle w/oats, add dough.

  6. slash tops.

  7. Rise 2-3 hrs.

  8. 375/50-60 – THEN top w/foil and bake 10-15min longer (208-210deg)

  9. Then bake 5min longer.
