Chicken Caesar Salad

Ingredients
- 4 boneless, skinless chicken breasts
- 1 tablespoon Dijon mustard
- 1 tablespoon Vinegar
- 2 tablespoons mayonnaise (no HFCS or corn syrup - kraft olive oil mayo works)
- 1/2 cup garlic-infused olive oil
- Salt to taste
- Pepper to taste
- Lemon juice to taste
- Anchovy paste to taste
- 1 baguette (white bread from grocery store bakery is usually free of HFCS, corn syrup, honey and molasses)
- 3 tablespoons butter
- 2 cloves garlic, crushed but left whole
- 1 teaspoon paprika
- 1 teaspoon pepper
- 2 heads of romaine lettuce
- freshly grated Parmesan cheese

Follow directions in Caesar Dressing recipe to make the dressing.

For croutons: Cut baguette into cubes. Melt butter in skillet with garlic cloves and season with paprika and pepper. Add bread cubes and saute just until bread cubes begin to brown. Fish out garlic cloves and discard. Set aside to cool.

Cook chicken breasts on grill.

Toss washed, dried and shredded lettuce with croutons, cheese, dressing and warm chicken breasts.
