Ingredients
- 12 oz Pasta ( I use Linguine)
- 15 oz Can diced tomatoes with liquid
- 4 1/2 Cups Veggie Broth (No salt)
- 1 Onion cut in strips or chopped
- 4 Cloves garlic thinly sliced
- 1/2 tsp red pepper flakes
- 2 tsp dried oregano leaves
- 2 tbsp. olive oil sprinkled on top
Directions

Break linguine in half and put into large pot

Pour tomatoes with juice over pasta

Pour Veggie Broth over tomatoes

Put in all other items

Cover and bring to a boil then reduce to a simmer stirring every two minutes for a total of ten minutes

Simmer until liquid is reduced to about one inch

Serve with Grated Parmasaen Cheese

NOTE: Two minutes before pasta is finished you can add the following:

cooked and peeled shrimp
-
cooked whole Italian sausage links diced.
- Cook sausage in same pan before putting pasta in. Take out and slice then return to pasta 2 minutes before it is done.
