Pralines

Ingredients

  • 2 cups sugar
  • 1 teaspoon baking soda
  • 1 cup buttermilk
  • 3/4 cup butter
  • 1 1/2 teaspoon vanilla
  • 1 1/2 coarsely chopped pecans

Directions

  1. in a heavy, large saucepan cook the sugar, baking soda, buttermilk and butter, stirring frequently, until the mixture reaches soft ball stage- about 240 degrees on a candy thermometer.

  2. Remove from heat and beat mixture until it lightens in color and thickens- about 5 minutes. Stir in the vanilla and pecans.
  3. Drop by tablespoonsful onto waxed paper and allow to cool.
  4. Makes about 3 dozen pralines.
