Dark Chocolate Peppermint Patties

Ingredients
- 1/2 cup coconut oil
- 1/4 c. agave nectar (or maple syrup)
- 1/2 tsp. peppermint oil
- 1/2 to 1 cup dark chocolate chips
- Parchement paper
Directions

In small bowl, combine coconut oil, agave nectar and peppermint oil.

Freeze mixture for 10 minutes; until it begins to harden. Use tbs. to measure out balls on parchment paper. Place in freezer until balls begin to harden (5-10 min.)

Meanwhile, melt chocolate chips in sauce pan.

Remove mint balls and flatten into patties using a spoon. Quickly dip patties into melted chocolate using spoon. Cover patties with chocolate and place on parchment paper.

Leave out for 10 minutes until patties harden.
