Dark Chocolate Peppermint Patties

Ingredients

  • 1/2 cup coconut oil
  • 1/4 c. agave nectar (or maple syrup)
  • 1/2 tsp. peppermint oil
  • 1/2 to 1 cup dark chocolate chips
  • Parchement paper

Directions

  1. In small bowl, combine coconut oil, agave nectar and peppermint oil.

  2. Freeze mixture for 10 minutes; until it begins to harden. Use tbs. to measure out balls on parchment paper. Place in freezer until balls begin to harden (5-10 min.)

  3. Meanwhile, melt chocolate chips in sauce pan.

  4. Remove mint balls and flatten into patties using a spoon. Quickly dip patties into melted chocolate using spoon. Cover patties with chocolate and place on parchment paper.

  5. Leave out for 10 minutes until patties harden.
