Ingredients
- 2-1/2 c thinly sliced squash, salted, drained
- Piecrust
- Combine: 3/4 c ricotta, 1/4 c mozzarella,
- 1/2 c parmesan with 1 t olive oil, s&p
- (if desired, lemon peel & juice)
- egg yolk + 1 tsp water
Directions

Roll out crust.

Leaving 1"border, top w/cheese, then squash.

Drizzle w/olive oil.

Lightly sprinkle w/Parm or herbs

Folk and pleat edges of crust. Brush w/yolk.
