Mexican Meatloaf

Ingredients

  • Nonstick cooking spray
  • 2 pounds lean ground beef
  • 1/2 package taco seasoning mix
  • 2 cups bread crumbs
  • 2 large eggs
  • 1 cup shredded cheddar cheese
  • 1 (16-ounce) can corn kernels, drained
  • 1 medium-sized onions, chopped
  • 1/2 cup spicy salsa

Directions

  1. Lightly coat the inside of the slow cooker with nonstick cooking spray

  2. Mix the remaining ingredients together in a large bowl

  3. Shape into a loaf and place on the bottom of the slow cooker

  4. Cover and cook for 6 to 8 hours on low or until meat is no longer pink

  5. When cooked through, cut into sqaures and carefully remove from the slow cooker

  6. This meal is especially good when served with a fresh spinach salad

  7. Makes 6-8 servings
