Baked Spinach and Artichoke Dip

Ingredients

  • 1 pkg (10 oz) frozen chopped spinach, thawed and squeezed dry.
  • 1 c mayo
  • 1/2 c chopped red pepper
  • 1 can (14oz) artichoke heart quarters, drained and coarsley chopped.
  • 1/4 c shredded cheese (either monterey jack or mozzarella)
  • 1 cup freshly grated parmesan cheese

Directions

  1. Mix mayo and parmesan cheese. Stir in artichoke hearts, spinach and red pepper.

  2. Spoon into 1 quart casserole pan and sprinkle with shredded cheese.

  3. Cover and bake at 350 for 15-20 min or until cheese is melted.

  4. serve warm on chunks of whole wheat bread, crackers, or tortilla chips.
