Chicken Enchiladas With Salsa Verde

Ingredients

  • 3C Shredded Cooked Chicken
  • 1 1/2C Salsa Verde
  • 1C Shredded Monterey Jack Cheese
  • 1/4t Salt
  • 1/4t Pepper
  • 8 6" Flour Tortillas

Directions

  1. Combine chicken, 1/2C salsa, 1/2C cheese, salt and pepper in a medium bowl

  2. Microwave on High 2 min until heated

  3. Spoon about 1/3C of mixture down the center of each tortilla, roll up and place on a greased cooking sheet

  4. Pour 1C salsa over enchiladas and sprinkle with 1/2C cheese

  5. Broil 8 min until cheese is melted
