Cornbread salad

Ingredients
- 1 box jiffy corn muffin mix
- 1 egg
- 1/3 cup milk
- 4 oz diced green chilies
- 1/8 tsp gr cumin
- 1/8 tsp dried oregano
- 1 cup miracle whip
- 1 cup sour cream
- 1 pkg dry ranch dressing
- 1 can black beans drained and rinsed
- 1 can 15 oz corn drained
- 3 med tomatoes, chopped
- 1 cup green onions chopped
- 10 crisp bacon strips chopped (optional)
- 1 cup shredded cheese
Directions

Mix corn muffin mix with egg, milk,green chilies, cumin and oregano

Place in 8 in pan coated with cooking spray and bake at 400 degrees for 15 to 20 minutes. Cool

In a small bowl combine mayo, sour cream and ranch dressing mix. Set aside

Crumble half of cornbread in a 13 by 9 in pan. Mix beans with corn and place half over cornbread

Top with half of mayo mixture, tomatoes ,green onions, bacon and cheese

Repeat layers

Cover and refrigerate for two hours
