Cornbread salad

Ingredients

  • 1 box jiffy corn muffin mix
  • 1 egg
  • 1/3 cup milk
  • 4 oz diced green chilies
  • 1/8 tsp gr cumin
  • 1/8 tsp dried oregano
  • 1 cup miracle whip
  • 1 cup sour cream
  • 1 pkg dry ranch dressing
  • 1 can black beans drained and rinsed
  • 1 can 15 oz corn drained
  • 3 med tomatoes, chopped
  • 1 cup green onions chopped
  • 10 crisp bacon strips chopped (optional)
  • 1 cup shredded cheese

Directions

  1. Mix corn muffin mix with egg, milk,green chilies, cumin and oregano

  2. Place in 8 in pan coated with cooking spray and bake at 400 degrees for 15 to 20 minutes. Cool

  3. In a small bowl combine mayo, sour cream and ranch dressing mix. Set aside

  4. Crumble half of cornbread in a 13 by 9 in pan. Mix beans with corn and place half over cornbread

  5. Top with half of mayo mixture, tomatoes ,green onions, bacon and cheese

  6. Repeat layers

  7. Cover and refrigerate for two hours
