Tomato Basil Tart

Ingredients

  • butter
  • Whole wheat flour
  • 1 1/2 c grated swiss cheese (divided)
  • 5 roma tomatoes cut in wedges
  • 1 c loosely packed fresh basil
  • 4 cloves garlic
  • 1/2 c regular mayo
  • 1/4 c grated parmesan
  • 1/8 t white pepper

Directions

  1. Combine butter, whole wheat flour, and water to make a rudementary pie crust. Bake at 350 about 10 min to set.

  2. Sprinkle some swiss cheese to just cover the bottom of the pie crust and cool.

  3. arrange tomatoe wedges in the pastry shell.

  4. Using a food processor or knife, chop the basil and garlic together and sprinkle on tomatoes.

  5. Combine mayo, parmesan and pepper and spread this on tomatoes.

  6. Sprinkle with remaining swiss cheese.

  7. Bake at 375 35-40 min.
