Oven Fried Chicken

Serves 6 people

Ingredients

  • 1 egg, beaten
  • 3 Tablespoons milk
  • 1 cup saltine crackers, finely crushed
  • 1 teaspoon lemon pepper
  • 2 to 2 1/2 pounds chicken pieces
  • 2 Tablespoons butter or margarine, melted

Directions

  1. Combine egg and milk.

  2. Combine crushed crackers and spice(s).

  3. Rinse chicken and pat dry.

  4. Dip chicken pieces into egg mixture and coat with crumb mixture.

  5. Arrange chicken in a greased pan so that pieces are not touching.

  6. Drizzle chicken pieces with the melted butter or margarine.

  7. Bake at 375 degrees for 45-55 minutes until chicken is tender and no longer pink. Do not turn.
