Mississippi Mud Cake

Ingredients

  • 4 eggs
  • 2 cups sugar
  • 1 cup melted butter
  • 1 1/2 cup flour
  • 1/2 cup unsweetened cocoa
  • 1 tsp. vanilla extract
  • 1 cup coconut
  • 1/2 cup chopped pecans
  • 7 ounce jar of marshmallow cream
  • Frosting:
  • 1/2 cup butter, melted
  • 1/3 cup unsweetened cocoa powder
  • 1 tsp. vanilla extract
  • 6 Tbs. milk
  • 4 cups powdered sugar

Directions

  1. Grease and flour 13 × 9 pan. Preheat oven to 360 degrees.

  2. In a large mixing bowl, beat eggs until thick. Gradually beat in sugar.

  3. Combine melted butter with flour, cocoa, vanilla, coconut, and pecans in additional bowl Add to egg/sugar mixture. Stir well with a spoon.

  4. Pour into pan and bake 30 minutes.

  5. Remove from oven and immediately spread marshmallow creme, swirling to give a marbled effect. Sprinkle nuts over top if desired. Spread frosting over marshmallow cream.
