Salmon with Avocado and Orange Salsa

Ingredients

  • 2 oranges
  • 2 avocado cubed
  • 1/4 cup red onion diced
  • 1/4 cup cilantro chopped
  • Salt
  • Oil
  • 4 Salmon Filets
  • 2 cups fresh spinach
  • 1/2 cup sliced carrots

Directions

  1. Heat oven to 450

  2. Peel and section 2 oranges and place in bowl (squeeze juice from any pulp left on rind)

  3. Add avocados, onions and cilantro

  4. Toss well and put aside

  5. Create 12×12 sheets of aluminum foil

  6. Place one salmon filet on each sheet of foil

  7. Top each filet with 1/8 tsp salt and 1 tsp oil

  8. Seal edges of foil, place on baking sheet, and bake for 8-10 min.

  9. Top baked salmon with 1/4 of the orange salsa

  10. Serve over salad of spinach and carrots
