Salmon with Avocado and Orange Salsa

Ingredients
- 2 oranges
- 2 avocado cubed
- 1/4 cup red onion diced
- 1/4 cup cilantro chopped
- Salt
- Oil
- 4 Salmon Filets
- 2 cups fresh spinach
- 1/2 cup sliced carrots
Directions

Heat oven to 450

Peel and section 2 oranges and place in bowl (squeeze juice from any pulp left on rind)

Add avocados, onions and cilantro

Toss well and put aside

Create 12×12 sheets of aluminum foil

Place one salmon filet on each sheet of foil

Top each filet with 1/8 tsp salt and 1 tsp oil

Seal edges of foil, place on baking sheet, and bake for 8-10 min.

Top baked salmon with 1/4 of the orange salsa

Serve over salad of spinach and carrots
