Molasses Cookies

Ingredients

  • 3/4 cup dark brown sugar, packed
  • 3/4 cup unsalted butter, softened
  • 1 large egg
  • 3/4 cup unsulfured molasses (6 oz)
  • 2 3/4 cup flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons ground ginger

Directions

  1. In a large bowl cream together the brown sugar and butter until creamy.

  2. Beat in the egg and molasses until light and creamy.

  3. Whisk together the dry ingredients in a medium bowl.

  4. Add the dry ingredients slowly to the butter mixture.

  5. Drop by teaspoonsful onto greased cookie sheets 2 inches apart and bake at 325 for 8-10 minutes or until set.

  6. Cookies should not brown.

  7. Cool on the baking sheet for 3 minutes, then transfer to a wire rack.

  8. Store in an airtight container, or wrap well and freeze.

  9. Makes about 40 medium cookies.
