Apple and Shrimp Curry

Cook time: 20 minutes
Serves 4 people
Ingredients
- 1/8 cup butter
- 1 clove chopped garlic
- 2 cups water
- 1 large tomato, chopped
- 1 large apple, peeled and chopped
- 1/2 tsp powdered ginger
- 1/2 tbsp sugar
- 2 tbsp curry powder
- 3/4 tsp salt
- 1/8 tsp black pepper
- 3/4 tbsp flour
- 2 pounds shrimp, frozen
Directions

Heat butter, add garlic, and cook until lightly browned.

Add water; bring to a boil.

Add tomato and apple.

Blend sugar, curry powder, flour, salt, pepper and ginger.

Add enough cold water to make a paste and gradually stir into boiling mixture.

Add shrimp and cook 5 minutes more.

Serve over rice.
