Beef Chili, Ultimate Comfort Food

The ingredients for this chili are completely exchangeable. It changes every time I make it and I don’t measure anything. You just keep adding to it until it’s the portion you want it to be. It’s a food you can cook while having a conversation.

Serves 6 people
Ingredients
- garlic
- ground beef (or ground turkey or ground tempeh)
- hot chili beans
- black beans
- kidney beans
- white beans
- black eyed peas
- golden corn
- bell peppers
- hot peppers
- tomatoes
- tomato paste
- cumin
- chili powder
- mustard seed powder
- onion powder
- brown sugar
- cocoa powder
- allspice
- hot sauce
- cheese
- sour cream
Directions

Saute garlic

Brown meat

Add beans and vegetables

Add water (at least 1 cup but I usually add more)

Add tomato paste

While bringing entire pot to a boil, add spices as you wish and mix well: cumin, chili powder, mustard seed powder (optional), brown sugar, allspice, cocoa powder, hot sauce

Let simmer for at least 20 minutes. The longer the better…

Serve with shredded cheese and sour cream

Optional: serve over macaroni noodles or other pasta or on top of a baked potato or with cornbread

Optional additions: sliced green or black olives, carrots, celery, onion, green onion, kale, sriracha, any other vegetable, bean, or spice you want to substitute
