Chocolate Banana Cream Pie

Ingredients
- 125g package cream cheese (room temperature)
- 6 squares bittersweet chocolate
- 1/4 cup candied ginger, finely chopped
- 250mL whipping cream
- 1/4 cup granulated sugar
- 1 tsp vanilla
- 3 medium bananas
- 9-inch ready-made chocolate wafer crumb pie shell
Directions

Melt chocolate until smooth; stir in ginger.

Place cream cheese in a large mixing bowl and beat until very smooth.

Beat chocolate mixture into the cream cheese until well-combined.

In a medium-sized bowl, whip cream with sugar until soft peaks from when beaters are lifted from bowl.

Beat in vanilla.

Fold cream mixture into the chocolate mixture.

Peel and slice two bananas; layer across the bottom of the pie shell.

Scrape chocolate mixture into the shell.

Refrigerate for at least one hour prior to serving.

Just before serving, add remaining banana around edge of pie.
