Ingredients
- 1 1/2 cups All Purpose Flour
- 1 cup sugar (or Splenda)
- 1/2 cup butter, softened
- 1 tsp baking soda
- 1/2 tsp. baking powder
- 1 tsp vanilla
- 2 eggs
- 1 cup sour cream
- Cinnamon/Sugar mix for topping
Directions

In a large mixing bowl, mix all ingredients until well blended.

Pour 1/3 cup into a standard paper muffin liners in a muffin pan

Sprinkle with cinnamon sugar

Bake at 350 degrees for about 16 minutes or until toothpick come out clean.

Makes about 12-14 muffins.

In lieu of sprinkling the cinnamon/sugar on top before cooking….I dipped the top of each muffin in a little melted butter after it was cooked and partially cooled, and then dipped it in the cinnamon/sugar.

(I didn’t use muffin liners, but sprayed the muffing tin with Pam before filling with the batter)
