Sour Cream Muffin Cakes

Ingredients

  • 1 1/2 cups All Purpose Flour
  • 1 cup sugar (or Splenda)
  • 1/2 cup butter, softened
  • 1 tsp baking soda
  • 1/2 tsp. baking powder
  • 1 tsp vanilla
  • 2 eggs
  • 1 cup sour cream
  • Cinnamon/Sugar mix for topping

Directions

  1. In a large mixing bowl, mix all ingredients until well blended.

  2. Pour 1/3 cup into a standard paper muffin liners in a muffin pan

  3. Sprinkle with cinnamon sugar

  4. Bake at 350 degrees for about 16 minutes or until toothpick come out clean.

  5. Makes about 12-14 muffins.

  6. In lieu of sprinkling the cinnamon/sugar on top before cooking….I dipped the top of each muffin in a little melted butter after it was cooked and partially cooled, and then dipped it in the cinnamon/sugar.

  7. (I didn’t use muffin liners, but sprayed the muffing tin with Pam before filling with the batter)
