Sate kambing

works ok with chook too
note that the quantities are all approximate

Cook time: 20 minutes
Serves 3 people

Ingredients

  • 3 kaffir lime leaves
  • 1/2 t rock salt
  • 4 cloves garlic
  • 2t fresh chopped ginger
  • 3T coriander leaves
  • 1/2 cup kecap manis
  • 600g diced lamb

Directions

  1. start 4 hrs before cooking

  2. soak your bamboo skewers in water for a couple of hours, then -

  3. grind the kaffir lime leaves, salt, garlic and ginger to a paste, using mortar&pestle

  4. chop the lamb to 2cm cubes and skewer it

  5. smear with paste

  6. drizzle w plenty of kecap manis

  7. sprinkle w coriander leaves

  8. smear the lamb around in the marinade

  9. leave 2hrs if poss

  10. grill or better bbq over coals, till well done
