Serves 2 peopleIngredients
- 2 cups chopped parsley (I used chervil)
- 1/2 cup couscous, or failing that, quinoa
- 2 cloves of garlic
- a handful of black olives
- a handful of capers
- 3 tomatoes dry
- 50 grams of feta cheese
- 6 anchovies in olive oil
- 3 tablespoons extra virgin olive oil
- 2 tbsp lemon juice
- Salt
- Pepper
Directions
-
The first is to hydrate the tomatoes in a bowl with water for at least 15 minutes. Dry and set aside.
-
prepare the quinoa with water twice the desired amount, cooking in water for 15 minutes. Drain and reserve.
-
Wash and dry them well parsley. Chop fine in a table.
-
Peel the garlic and cut into thin slices.
-
Cut the dried tomatoes into strips, and do the same with the cheese.
-
Mix all the ingredients and prepare the dressing.
-
Serve with olives cut into rings and anchovies above.
-
Notes – this is my own interpretation of the salad. You can read more here . You can change and combine. Surely with diced fresh tomatoes, or onions, or even some raisins, salad is to die.
