Crustless Apple Pie/Apple Crisp

Ingredients
- 3 large Apples, peeled and cut into bit size pieces
- 1/4 cup Sugar
- 1/4 cup Water
- 3/4 teaspoon Cinnamon
- 1/4 teaspoon Nutmeg
- 12 Lorna Dunne Shortbread Cookies
- Vanilla Ice Cream
Directions

Combine apples, water, sugar, cinnamon and nutmeg in a large saucepan and bring to a boil.

Reduce heat – cover and simmer for 10 minutes until apples are tender (you can easily pierce them with a fork.)

Uncover and cook 9 to 10 minutes longer until most of the liquid is gone. Remove from heat.

While apples are cooking, place cookies in a Ziploc bag and crush with hands or by rolling a can over them.

Layer bowls (2-4) with some cookie crumbs, then cooked apples, topped with more cookie mixture and scoop of ice cream on top.

Serve immediately.
