Ingredients
- 1 cup of brown sugar
- 1 tablespoon ancho chili powder
- 1/4 teaspoon cayenne pepper Water as needed 1 pound of bacon, thick cut
- Baking sheet with a ridge
- Silpat to line tray
Directions

Place the sugar and chilies into a shallow tray; add enough water to turn it into a slurry the thickness of thin applesauce. Dip a strip of bacon into the sugar slurry and coat both sides.

Place bacon on the Silpat on a clean tray and bake at 425 degrees for 12-15 minutes for thick cut, or a little less time for thinner cut bacon. Use tongs to place bacon on a cooling rack. Wait until cool and enjoy!
