Ingredients
- 1 (12-14 lb) seedless watermelon
- 2 tbsp champagne vinegar
- 2 tbsp olive oil
- salt & pepper
- 4 oz blue cheese, crumbled (1 c)
Directions

Cut watermelon in half crosswise.

Place each piece, cut side down, on cutting board and cut in half from top to bottom.

Cut each pice lengthwise into 3 wedges.

Cut off peel from each piece and cut each piece into 1/2" thick triangles.

Place triangles in a large bowl.

In small bowl, whisk vinegar, oil, 1/4 tsp salt & 1/4 tsp pepper.

Drizzle over watermelon.

Add blue cheese & toss very gently to coat.
