Carne Guisada

Serves 6 people
Ingredients
- 2 lb chuck roast (or venison roast), trimmed and cubed
- 2 tbsp. oil
- 2-3 oz onion, chopped
- 1 can (4 oz) green chiles, chopped
- 14 oz beef or chicken broth
- 1 can (14.5 oz) diced tomatoes, undrained
- 1/2 can (4 oz) jalapenos, chopped
- 2 tbsp. chili powder
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp cumin
- salt
- pepper
- xanthan gum
Directions

In a large Dutch Oven, heat oil to medium-high; brown beef on all sides

Add all remaining ingredients (except xanthan gum) and bring to a simmer

Cover and simmer 2 hours; then remove lid and raise heat to boil for about 10 min (to thicken sauce)

If needed, sprinkle in xanthan gum and stir through to thicken

Serve with shredded cheese and sour cream
