Summer Sausage

Can use venison or lean beef

Ingredients

  • 3/4 cup water
  • 2 lbs venison or beef, ground
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp onion powder
  • 1/4 tsp garlic powder
  • 2 T Morton's Tender Quick Salt
  • 1 T liquid smoke
  • 1 - 1 1/2 T mustard seed

Directions

  1. Mix all ingredients well.

  2. Form into 2 rolls and wrap in foil.

  3. Refrigerate 24 hours.

  4. Poke holes in foil on bottom of rolls with a fork.

  5. Place rolls on cooking rack over a cake pan to catch drippings.

  6. Bake at 350 for 1 hour.
