Ingredients
- 3 cups potatoes, peeled & cubed
- 2 cups milk
- 2 cups California blend frozen veggies
- 1 lb Velveeta
- 3 T butter
- cubed ham, optional
- salt & pepper
Directions

Place potatoes in large pan with 4 cups water.

Bring to boil

Reduce heat, cover & simmer 10 – 15 minutes.

Drain.

Add milk & veggies to drained potatoes.

Bring to gentle boil.

Reduce heat.

Add ham, cheese, butter and salt & pepper.

Heat on low, stirring frequently until cheese is melted & veggies are tender-crisp.
