Cheese Potato Soup

Ingredients

  • 3 cups potatoes, peeled & cubed
  • 2 cups milk
  • 2 cups California blend frozen veggies
  • 1 lb Velveeta
  • 3 T butter
  • cubed ham, optional
  • salt & pepper

Directions

  1. Place potatoes in large pan with 4 cups water.

  2. Bring to boil

  3. Reduce heat, cover & simmer 10 – 15 minutes.

  4. Drain.

  5. Add milk & veggies to drained potatoes.

  6. Bring to gentle boil.

  7. Reduce heat.

  8. Add ham, cheese, butter and salt & pepper.

  9. Heat on low, stirring frequently until cheese is melted & veggies are tender-crisp.
