Lentils in a Sauce

Ingredients
- 1 cup lentils
- 1 med onion, finely chopped/grated
- 1 med ripe tomato, grated
- 2 garlic cloves, minced
- 4 tablespoons finely chopped parsley
- 2 tablespoons finely chopped cilantro
- 1 1/2 teaspoons paprika
- 1 teaspoon cumin
- black pepper, to taste
- 1 1/2 teaspoons salt
- 1 tablespoon olive oil
Directions

Pick over and wash lentils

Place lentils>pepper and 3 cups water in medium pot on medium-high heat

Bring to boil; lower heat to low and partially cover

Cook gently for 20 minutes

Add salt and stir well

Cook, partially covered, 20-30 minutes, or until lentils are tender

Stir in oil
