Ingredients
- 1 1/2 cup flour
- 2/3 cup sugar
- 1/2 cup corn meal
- 1 T. baking powder
- 1/2 tsp. salt
- 1 1/4 cup milk
- 2 large eggs, lightly beaten
- 1/3 cup canola oil
- 3 T. margarine melted
Directions
- Preheat oven to 350 degrees. Grease pan. Combine flour, sugar, corn meal, baking powder and salt in medium bowl. Combine milk, eggs, canola oil, and butter in a small bowl; mix well. Add to flour mixture: stir just until blended. Pour into prepared muffin cups, filling 2/3 full.
- bake for 18-20 minutes. Cool in pans for 5 minutes. Serve warm.
