Chocolate Coconut Slice

Softer version of favourite slice recipe of same name

Serves 16 people

Ingredients

  • 125 g butter, softened
  • 200 g soft brown sugar
  • 1 egg, lightly beaten
  • 1 t vanilla extract
  • 110 g plain flour
  • 1 t baking powder
  • 2 T cocoa
  • 3/4 C dessicated coconut
  • extra coconut to decorate

Directions

  1. Beat together butter, sugar, egg and vanilla.

  2. Sift in flour, baking powder and cocoa, mix well – then stir in coconut.

  3. Spread mixture in lined slice tin.

  4. Bake at 170oC approx 20 minutes, until firm.

  5. Cool slightly, then ice with chocolate icing, and sprinkle with extra coconut.

  6. Cool before cutting.
