Apple Muffins

Ingredients

  • 2.5 cups all-purpose flour
  • 2 cups quick-cooking rolled oats
  • 1 cup brown sugar, lightly packed
  • 2 tsp baking soda
  • 2 tsp ground cinnamon
  • 3 cups apple, coarsely chopped
  • 1.5 cups plain yogurt
  • 1 cup vegetable oil
  • 4 eggs

Directions

  1. eheat oven to 400.

  2. In a large bowl, combine flour, oats, brown sugar, baking soda and cinnamon; mix well.

  3. In another bowl, combine apples, yogurt, oil and eggs; mix well.

  4. Add wet ingredients to dry, stirring until just moistened – do not overmix.

  5. Spoon into greased muffin tins or muffin cups.

  6. Bake for 18 minutes for full-sized muffins or 10 minutes for mini-sized muffins.
