Apple Muffins

Ingredients
- 2.5 cups all-purpose flour
- 2 cups quick-cooking rolled oats
- 1 cup brown sugar, lightly packed
- 2 tsp baking soda
- 2 tsp ground cinnamon
- 3 cups apple, coarsely chopped
- 1.5 cups plain yogurt
- 1 cup vegetable oil
- 4 eggs
Directions

eheat oven to 400.

In a large bowl, combine flour, oats, brown sugar, baking soda and cinnamon; mix well.

In another bowl, combine apples, yogurt, oil and eggs; mix well.

Add wet ingredients to dry, stirring until just moistened – do not overmix.

Spoon into greased muffin tins or muffin cups.

Bake for 18 minutes for full-sized muffins or 10 minutes for mini-sized muffins.
