Gandule Rice

Ingredients

  • Chop to desired size, combine and brown on med/high:
  • 1-2 lbs. pork
  • 1 Goyeya mild Portugese sausage
  • 2 T. achoite oil
  • Mince:
  • 1/2 medium bell pepper
  • 2 med. oregano leaves
  • 1 medium onion
  • 2 cloves garlic
  • 1 bunch Chinese parsley
  • Combine and add all vegetables to pork ~ cook 5 minutes. Add 2 cans tomato sauce and 1 can gandule beans.
  • Add the folling and salt, bringing all to boil:
  • 3 c. rice
  • 2 c. water
  • Lower to simmer after.
  • After 10-15 minutes, when the beans are on top of the rice, gently mix.
