SWEET POTATO MINI CUPCAKES WITH SPICED MAPLE BUTTERCREAM

1 3/4 cups pumpkin puree may be substituted for sweet potato.

Ingredients
- 1 (15.25 oz.) box spice cake mix
- 1 3/4 c. mashed sweet potato
- 3/4 c. whole buttermilk
- 1/4 c. vegetable oil
- 3 large eggs
- Spiced Maple Buttercream
Directions

Preheat oven to 325 degrees.

In a large bowl, stir together cake mix, sweet potato, buttermilk, oil, and eggs until smooth. Divide evenly among prepared muffin cups.

Bake for 15 minutes or until a wooden pick inserted into the centers of the cupcakes comes out clean. Let cool in pans for 2 to 3 minutes. Remove from pans, and let cool completely on wire racks.

Frost with Spiced Maple Buttercream.
