Lynn’s Paradise Café’s crab queso

Ingredients

  • 1 pound shredded or diced Velveeta
  • 1 to 1 1/2 cups whipping cream
  • 1 cup breakfast salsa (see recipe)
  • 2 ounces (1/4 cup) roasted red peppers
  • 8 ounces (1 cup) cooked crabmeat

Directions

  1. Mix together all ingredients in top half of a double-boiler – start with only 1 cup heavy cream and thin mixture as needed (I thought it seemed a little thin when I tested it, so adjust to your taste). Warm over boiling water until mixture is thoroughly combined. Makes about 6 cups.
