Slow Cooker Beef Stew

Ingredients

  • 10 small potatoes, halved
  • 1 onion, sliced
  • 8 oz. carrots cut into 2 in. pieces
  • 1 red pepper cut into 1 in. pieces
  • 1 1/2 lbs. stew meat, cut into 1 in. cubes
  • 2 cups beef broth
  • 1/2 tsp oregano
  • 1/4 tsp paprika
  • 1 tsp parsley
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 tbsp worcestershire
  • 3 tbsp corn starch
  • 3 tbsp cold water

Directions

  1. Place potatoes, onions, and carrots in crockpot. Add bell pepper and beef.

  2. In small bowl, combine broth, oregano, paprika, parsley, salt, pepper & worcestershire. Pour over meat and vegetables. Cover and cook on low 9 to 10 hrs.

  3. Turn pot on high. In small bowl, dissolve cornstarch in water; stir into cooked stew mixture. Cover and cook on HIGH 15 to 20 mins or until thickened, stirring occasionally.
