Pfeffernüsse

- 4 cups flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp ground white pepper
- 1 tsp ground cinnamon
- 1/2 tsp ground cardamom
- 1/2 tsp ground ginger
- 3/4 tsp salt
- 3/4 cup butter or margarine, softened
- 1-1/4 cups brown sugar, packed
- 2 eggs
- 3/4 cup almonds, finely chopped (optional)
Directions

Preheat oven to 350°F (180°C).

Combine dry ingredients and set aside.

In a separate bowl, beat butter and sugar together until light and fluffy.

Add eggs one at a time, beating well after each addition.

Stir in dry ingredients 1/2 cup at a time.

Add almonds, if desired.

Roll into one-inch balls and arrange one inch apart on an ungreased baking sheet.

Bake 11-14 minutes (lower number => less crunchy, higher number => crunchier).

Cool on wire racks.

Roll in powdered sugar, if desired.

Can be eaten immediately, or stored in an airtight container for three days to mellow flavors.
