Lentil and Parsnip Pottage (soup!!)

Ingredients
- 3 slices bacon, chopped
- 1 onion, chopped
- 2 carrots, chopped
- 2 parsnips, chopped
- 1/3 cup red lentils
- 4 cups vegetable boulion
- salt and pepper
- Fresh chives, chopped (to garnish)
Directions

Heat large pan, add bacon and dry-fry for 5 minutes

Add chopped onion, carrots, and parsnips and cook for 5 minutes

Add lentils to pan and stir to mix with veggys

Add boulion to pan and bring to boil. Cover and simmer for 30-40 minutes or until tender

Transfer soup to blender in small batches, for a few seconds

Return to pan and reheat gently

Season with salt and pepper to taste

Garnish with choppe fresh chives
