Sunday Breakfast Casserole

Sunday morning, a time to indulge yourself with sleep-in and a delicious late breakfast with a cup of aromatic coffee. This breakfast casserole can be prepared the night before, so when you wake up on Sunday morning, just preheat the oven and pop the casserole in for about 30 minutes, and voila, a yummy breakfast is ready for your leisurely enjoyment. Try serving fruit salad with this casserole, and add blueberry muffins to turn this into a mini Sunday brunch. The instructions below may seem to have many steps, but this casserole is really very simple to prepare. To add an egg florentine twist to the dish, you could also add a package of defrosted and drained frozen spinach, spread out evenly just before the cheese layer. You could also replace the sausages with ham, browned pork sausages or browned bacon.

Ingredients
- 2 pieces of day old bread (OK to use bread that is a few days old because it works better with bread with less moisture)
- 1 tsp butter
- 3 large eggs
- 2/3 cup milk
- 1/4 tsp sea salt
- 1/2 tsp dry rosemary (crush with your fingers)
- 1/4 tsp salt and herbs mix (from Olivers) or Italian herb mix (could be omitted if you don't have neither, just add a pinch more salt)
- 2 Johnsonville sausages (I used the smoked sausages with Cheddar cheese)
- 1/2 cup shredded parmesan cheese
- 1/2 cup shredded 4 cheese
Directions

Rub a 9 inch round glass baking dish with butter (can replace with vegetable oil)

Beat the eggs and mix with milk and salt, set aside

Cut bread into cubes and spread on bottom of baking dish

Cut sausages into 1/4 inch thick pieces, and spread half on the bread

Add cheeses on top of sausages

Pour the egg mixture evenly over the casserole

Sprinkle salt and herbs mix or Italian herb mix on top

Finally add the remaining sausages evenly on top

The casserole can be prepared up to this stage, wrapped in plastic wrap and stored in the refrigerator overnight for baking in the following morning

Remove casserole from the refrigerator while preheating the oven to 190 C. Bake casserole in oven for 30 minutes (adjust for less time in convection oven)

Cooked casserole should be golden brown on the top and puffed up. To test for doneness, toothpick inserted into the middle should come out clean without sticky batter attached.
