Chorizo and tomato pasta

Ingredients
- 250g fresh pasta
- 400g can of cherry tomatoes
- 125g mozzarella, drained and chopped
- 100g chorizo, chopped
- grated Parmesan, to serve
Directions

Preheat the oven to 200˚C/fan 180˚C/gas 6. Tip the pasta into 2 individual dishes, then pour over the cherry tomatoes. Add the mozzarella and chorizo. Season, pour in 150ml boiling water and mix everything together. Cover tightly with foil, then bake in the oven for 20 minutes, until piping hot and the pasta is cooked through. Divide between plates, then grate over Parmesan to serve.
