Grilled Bread Salad

Ingredients

  • 1 baguette (or 8 oz crusty bread)
  • 1/4 cup olive oil
  • 1/4 cup lemon juice, fresh
  • 2 tbsp shallot, diced
  • 1/4 tsp garlic, minced
  • 1-1/2 lbs tomatoes, chopped
  • 1/4 cup basil, roughly chopped

Directions

  1. Can substitute scallion or red onion for shallot

  2. Can substitute parlsey for basil
