pork tenderloin

Ingredients

  • pork tenderloin
  • 2 tbsp brown sugar
  • 1/4 cup rum
  • 1/4 cup soya sauce
  • 1/3 cup sour cream
  • 1/3 cup mayonnaise
  • 1 1/2 tsp dry mustard
  • 2 green onions, finely chopped

Directions

  1. marinade: mix brown sugar, rum and soya sauce

  2. place tenderloin and most of marinade in plastic bag

  3. save some marinade for cooking

  4. refrigerate for 4-5 hours or overnight, turning occasionally

  5. sauce: mix sour cream, mayonnaise, dry mustard and onions together and refrigerate for several hours

  6. preheat over for 325ºF

  7. place shallow pan of water on bottom rack of oven

  8. remove tenderloin from marinade

  9. cut into slices for serving

  10. place in shallow cooking dish

  11. cook for 45-60 minutes – basting 3 to 4 times
