Cucumber Salad with Scallops

Ingredients
- 4 cucumbers, medium (2 lbs)
- 2 tbsp fish sauce
- 2 limes, juice of
- 1 clove garlic
- Red pepper flakes
- 1 tbsp lemongrass, minced
- 1/2 tsp sugar
- 6 cups mixed salad greens
- 1 lb sea scallops
- 1 tbsp canola oil
- 1/8 tsp cayenne pepper
- 1/2 cup chopped mint
- 2 tsp dark sesame oil
