Lemongrass-Ginger Soup with Mushrooms

Ingredients

  • 6 cups chicken stock
  • 3 stalks lemongrass
  • 4 slices fresh ginger
  • 4 hot chiles, small, minced
  • 2 tbsp fish sauce
  • 6 oz oyster mushrooms
  • 2 tsp lime zest
  • 1 lime, juice of
  • 1/4 cup cilantro leaves

Directions

  1. Can add 2 cups cubed chicken or 1 lb shrimp
