Lemongrass-Ginger Soup with Mushrooms

- 6 cups chicken stock
- 3 stalks lemongrass
- 4 slices fresh ginger
- 4 hot chiles, small, minced
- 2 tbsp fish sauce
- 6 oz oyster mushrooms
- 2 tsp lime zest
- 1 lime, juice of
- 1/4 cup cilantro leaves
