Christmas Crunch

Lady at my husbands office gave him some of this. I ate it all!! I don’t see why it is limited to “Christmas”, just a great year-round snack. Healthy too.

Ingredients
- 2 cups crisp wheat cereal squares
- 2 cups crisp rice cereal squares
- 2 cups crisp corn cereal squares
- 2 cups crisp oat cereal squares
- 1 cup chopped pecans
- 1 cup dried cherries
- 1 cup coconut flakes
- 1/2 cup slivered almonds (she used sliced)
- 1 cup sweetened dried cranberries
- 1 cup golden raisins
- Coating:
- 1 stick real butter
- 1 cup pure honey
- 1 tablespoon cinnamon
Directions

Line 2 large shallow rimmed baking sheets with parchment paper; spray well with non-stick spray.

Mix well in a large bowl all cereal, nuts and fruits.

Layer half of the cereal mixture onto each baking sheet.

In a 2 cup capacity glass bowl, microwave the butter on high for 1 minute, add the honey and cinnamon and whisk until well mixed.

Drizzle half of the honey mixture over one pan of cereal and gently stir with a spatula to coat. Repeat with the other pan of cereal.

Bake at 325 degrees for 20 minutes or until the coconut turns light golden brown, stirring at 10 minutes. Cool pans of crunch mix on wire racks completely.

Break into large and small pieces.
