Ginger Flank Steak

Serves 6 people

Ingredients

  • 1 1/2 – 2 lb. flank steak
  • 1 Tbsp. minced garlic (about 6 cloves)
  • 1 Tbsp. fresh minced ginger
  • 3 scallions, white and green parts, finely sliced
  • 2 Tbsp. peanut oil
  • 3 Tbsp. soy sauce
  • 2 tsp. rice vinegar
  • 1 bunch Asparagus
  • 2 Tbsp. pinenuts

  1. In a small bowl, whisk together the

  2. remaining ingredients and pour them over the steak. Flip the steak a few times to coat with the sauce. If time allows, refrigerate it for at least 30 minutes and up to 1 day.

  3. Preheat the grill to medium-high, or preheat the broiler. Transfer the steak to the grill or a broiler pan.

  4. Grill or broil it for 4-6 minutes per side until it is browned on the outside and only slightly pink in the middle. Slice the meat on the diagonal (try to go against the grain of the steak so it won’t be stringy) and serve.

  5. Side Dish suggestion: To make sautéed asparagus with pine nuts, Cut 1 bunch of trimmed asparagus into thirds. In a medium skillet, heat 1 Tbsp. olive oil over medium heat.

  6. Add 2 Tbsp. pine nuts and toast them in the oil for 1-2 minutes, then add the asparagus and stir-fry it for 3-5 minutes until it is tender crisp. Season it with salt and black pepper to taste.
