Moosewood Banana Bread

Ingredients
- 1 1/2 cups melted butter
- 1 1/2 cups brown sugar OR honey
- 4 eggs, room temp
- 1 T vanilla extract
- zest of 1 orange
- 2 cups whole wheat flour
- 2 cups white flour
- 1 tsp salt
- 1/2 t baking soda
- 1 T baking powder
- 1 t nutmeg
- 2 t ground cinnamon
Directions

Beat first 5 ingredients together in large bowl, beginning with butter and sugar; add eggs one at a time. Add remaining ingredients, beat til light in color.

Sift dry ingredients together twice.

2 cups well-mashed ripe bananas soaked in 1 cup strong coffee

Add flour mixture and bananas alternatively to butter mixture, beginning and ending with flour. Mix gently but do not overbeat. Add up to 1 cup each raisins, walnuts.

Bake in generously buttered loaf pans sprinkled with sesame or poppy seeds. Bake 350 F 40 – 50 minutes.

Cool 10 minutes in pan the remove to finish cooling.
